Our sausages taste better because they are handcrafted and fermented the old fashioned way.
Ordinary snack sausages are stuffed in fibrous casings with pork hearts and other unsavory products and cooked - DONE!
We stuff our sausages in all natural casings with select cuts of pork shoulder and lean strips of beef. We then ferment, smoke and dry them over a period of several days. (Sorry, the exact process is a secret!)
We don't just smoke OUR sausages either, we use a special blend of hardwoods to give a truly unique smoke flavor.
The Sumerians were enjoying sausages 5000 years ago in what is now Iraq!
